Anisée: Absinthe & Pastis

Absinthe & pastis are the most famous members of the anisée category. While absinthe was banned a long time because of its supposedly hallucinogenic ingredient thujone, this is not included in pastis. Both pastis and absinthe are traditionally enjoyed diluted with water. Pastis combines well with mint liqueur or grenadine, while absinthe is particularly used in cocktails such as the Sazerac. Popular brand names include, for example, Ricard, Pernod and Pastis 51.
